This 2004 McLaren Vale Cab is dark ruby red in color, juicy and aromatic on the nose with hints of leafy and tobacco varietal characters. The palate is instantly rich and mouth filling with ripe cherry and blackcurrant fruit. Well structured with mocha and chocolate flavors and fine emery tannins. White pepper and cloves combine to give a lengthy, spicy finish. It is drinking well now and will cellar for many years.

This 2010 from Australia's Barossa Valley has a dark and inky garnet color with a nose of ripe plums and blackberry jam. It follows with a full palate of creamy fruit, mocha and just a touch of black pepper that lingers. It is reminiscent of a chocolate mocha and blackberry cupcake. Enjoy with spicy short ribs, Cajun catfish or steak au poivre.
The 2009 Cabernet Sauvignon The Maitre D' was raised in 50% new French and American oak for 11 months. Opaque purple-colored with legs that ooze down the glass, it displays a reticent bouquet that with coaxing reveals wood smoke, violets, black currant and blackberry. This is followed by a full-bodied wine with a glossy texture, succulent fruit, and excellent concentration. This pleasure bent effort can be enjoyed over the next 3-5 years. -90 Points Robert Parker
The 2009 Shiraz is 20% from Langhorne Creek and 80% McLaren Vale. Very deep garnet-purple colored, it is profoundly scented of blueberry and black cherry with touches of mint, mocha and the faintest whiff of damp loam. Very full-bodied, the bold, ultra-ripe fruit is well supported by medium-firm chewy tannins and medium-high acid, leading to a very long and pure if slightly warm finish. This 2009 from Langhorne Creek in South Australia is estate bottled and 100% Cabernet Sauvignon. It is an elegant wine with aromas of mixed berries, dark chocolate and violets. The palate is smooth with blackcurrant and spicy oak flavors and finishes with fine chalky tannins. Aged in French Oak for 14 months. Pairs well with a rack of lamb or beef.
100% McLaren Vale Shiraz. Deep garnet-purple colored, 2009 Red Silk Shiraz has aromas of freshly crushed blackberries, green peppercorns and red currant over dried leaves and loam. Full bodied with plenty of vibrant primary fruit on the palate, it has crisp acid, a medium-firm level of chunky tannins and a long finish with lingering dried Mediterranean herb flavors lending freshness. Lively citrus, peach and tropical fruit flavors present through subtle oak and a well-balanced, dry finish.
Medium red with deep scarlet hues, the 2009 Stamp of Australia Merlot shows intense fruit aromas of ripe plum and berry. Hints of chocolate with a spicy, soft oak undertone can be detected on the nose. The medium-bodied palate exhibits juicy and ripe fruit character balanced by fine acidity. A smooth mouth-feel is delivered through soft tannins that also give the wine a pleasant, lingering soft finish.
Winemaker's notes: "Very deep crimson with purple hues. The nose has rich dark cherries, Satsuma plum and mulberry fruits jump out of the glass, mingling with fine milk chocolate, white pepper and cinnamon. Full-bodied, mouth filling with lovely plums and cherries carried with chocolate and vanillin American oak. Balancing off the sweet fruit is firm but fine tannin and sweet and briary spices. A perfect match for richly flavored meats, game or mature cheddars." It is a straightforward yet impressively deep, rich, pure Shiraz to consume over the following 10 years.
A polished, refined Cabernet, nicely fleshed out with currant and plum fruit, shaded with hints of white pepper and cream as the finish lingers.
